Why does the gold rate change every day?

Gold is priced off the international spot rate (set on exchanges like COMEX and the London bullion market), which moves throughout the trading day. That USD price is then converted to INR using the prevailing exchange rate, so a stronger or weaker rupee shifts the local rate even on a day the international price barely moves.

What's the difference between 24K, 22K, and 18K gold?

It's the purity: 24K is 99.9% pure gold, 22K is 91.6%, and 18K is 75%. Jewellery is rarely made in 24K since pure gold is too soft — 22K and 18K trade some purity for durability, which is also why they're priced lower per gram than 24K.
